Instructions
Pierce sweet potatoes 3 to 4 times with a fork. Place the potatoes on a microwave-safe plate and microwave for 10-15 minutes. If your potatoes aren't tender after 15 minutes, continue microwaving in 30-second increments.
When potatoes are cooked through, scrape inside into a large bowl and discard skin. Using a potato masher or a fork, mash sweet potatoes until smooth. Add egg, whey protein powder, erythritol, vanilla extract and combine.
Line baking sheets with parchment paper and preheat oven to 350F
Put the sweet potato mixtures in the piping bag and pipe it in 1.5-inch diameter domes on the parchment paper.
Bake them in the oven for 15 minutes, then garnish with pecans.
