Annin Tofu (Almond Tofu)
Annin tofu (almond tofu) is soft and subtly sweet Chinese style almond jelly. It is often served with fruit cocktails and very easy to make at home.

- 1½ cups water 360ml
- 1 cup unsweetened almond milk 240ml
- ¼ cup granulated sugar 57 grams, add more if you like sweeter
- 2 packets Knox gelatin powder 14 grams
- 1 tablespoon almond extract 14 grams
- 2 4oz fruit cocktail cups for decoration, optional
Put the gelatin in 1/2 cup of water and let it sit for 5 minutes. It will bloom into gel-like.
In a large pot, add the rest of the 1 cup of water and all the sugar and cook until the sugar dissolves. Turn off the heat and scrape the bloomed gelatin into the pot and stir until dissolved. Whisk in the almond milk and almond extract to combine.
Gently pour into glass cups. If bubbles form on the surface, try popping them using a toothpick. Let it cool then transfer the cups to a refrigerator and let them chill for 3-4 hours.
Top with some fruit cocktail and its syrup and enjoy!
