<h2 class="wp-block-heading" id="what-is-a-whoopie-pie"><strong>What is a whoopie pie?</strong></h2>



<p>A whoopie pie is an American dessert made from two soft rounds of chocolate cake with creamy fillings sandwiched in between.</p>

<h2 class="wp-block-heading" id="whoopie-pie-with-cake-mix"><strong>Whoopie pie with cake mix</strong></h2>



<p>For this whoopie pie recipe, I really wanted to make it as easy as possible so I used a store-bought cake mix. Using cake mix saves time in measuring and shopping for a bunch of ingredients. Baking everything from scratch is nice, but when these super easy whoopie pies taste so good, what’s the harm in cutting corners? 🙂 I adapted this recipe from <a href="https://www.bettycrocker.com/recipes/easy-whoopie-pies/20a388d8-be91-4647-9478-bd28bd15889b" target="_blank" rel="noreferrer noopener">bettycrocker.com</a> and add my own twists.</p>



<h2 class="wp-block-heading" id="whoopie-pie-filling-options"><strong>Whoopie Pie Filling Options</strong></h2>



<p>Traditionally, whoopie pie fillings are vanilla buttercream frosting and marshmallow fluff but we can experiment with frosting options. For this recipe, I have two options depending on how much time you are willing to spend.</p>



<p><strong><em>Option 1 &#8211; Use store-bought cake frostings to save time</em></strong></p>



<p>There’s no shame in wanting to save time. Store-bought frostings are easy to use and come in lots of flavor options. </p>



<p>I also tried whoopie pies with store-bought marshmallow filling by itself, but the cream will melt away from the cake very quickly so it is not recommended unless you eat them immediately.</p>



<p><strong><em>Option 2 &#8211; Make your own buttercream frosting</em></strong></p>



<p>If you love cream cheese, you&#8217;ll love my cream cheese flavored buttercream. It takes extra effort but it’s still easy enough to whip up. Of course, you can make your favorite kind of buttercream as well 🙂</p>



<h2 class="wp-block-heading" id="ingredients"><strong>Ingredients</strong></h2>



<h4 class="wp-block-heading" id="for-the-chocolate-cake"><strong>For the chocolate cake</strong></h4>



<ul class="wp-block-list"><li><strong>1box</strong> Betty Crocker Super Moist Devil&#8217;s Food cake mix</li><li><strong>3/4cup</strong> milk</li><li><strong>1/2cup</strong> butter, melted</li><li><strong>3</strong> eggs</li><li><strong>1box (4-serving size)</strong> chocolate instant pudding and pie filling mix</li></ul>



<h4 class="wp-block-heading" id="for-the-filling"><strong>For the filling</strong></h4>



<p><em>Option 1 &#8211; Store-bought cake frosting</em></p>



<ul class="wp-block-list"><li>2 containers Betty Crocker Whipped Fluffy White Frosting or any other flavor of your choice</li></ul>



<p>Option 2 &#8211; Homemade cream cheese buttercream</p>



<ul class="wp-block-list"><li><strong>½ cup</strong> butter, softened</li><li><strong>8oz </strong>cream cheese, softened</li><li><strong>2 ½ cups</strong> powdered sugar</li><li><strong>2 tablespoons</strong> milk</li><li><strong>2 teaspoons</strong> vanilla</li></ul>

<h2 class="wp-block-heading" id="instruction"><strong>Instruction</strong></h2>



<h4 class="wp-block-heading" id="for-the-chocolate-cake-1"><strong>For the chocolate cake</strong></h4>



<ol class="wp-block-list"><li>Heat oven to 350°F.</li><li>Line cookie sheets with parchment paper, silicone baking liners, or lightly spray with cooking spray.</li><li>In a large bowl, beat the cake mix, milk, butter, eggs, and the instant pudding mix with an electric mixer on low speed until moistened; beat 1 minute longer on high speed.</li></ol>

<p>4. Pour batter into a 1-gallon Ziploc bag. Seal the bag and cut a small hole off of one of the bottom corners.</p>



<p>5. Pipe batter into 1 to 2-inch circles onto cookie sheets. Then make sure to pipe it at least 1-inch apart to allow spreading. (I piped about 1.5-inch circles and made 40 whoopie pies at the end)</p>

<p>6. Bake 10 to 12 minutes until set. Be careful to not overbake. Cool 2 minutes; remove from cookie sheets and place on a cooling rack. Cool completely before filling.</p>

<h4 class="wp-block-heading" id="for-the-cream-cheese-buttercream-filling-if-you-chose-to-use-store-bought-frostings-skip-to-the-assembly-instruction"><strong>For the cream cheese buttercream filling</strong> (If you chose to use store-bought frostings, skip to the assembly instruction)</h4>



<ol class="wp-block-list"><li>In a large bowl, beat softened butter, softened cream cheese, powdered sugar, milk, and vanilla with an electric mixer on medium speed for 2 to 3 minutes or until smooth. Cover the bowl and refrigerate until ready to assemble.</li></ol>



<h4 class="wp-block-heading" id="for-the-assembly"><strong>For the assembly</strong></h4>



<ol class="wp-block-list"><li>Once the chocolate cakes are cooled, fill a piping bag or a large Ziploc bag with the filling. Cut a small hole off of one of the bottom corners.</li><li>Pipe filling on the flat side of one cake. Top with the second cake, flat side down to make a sandwich. Continue until all cakes are used.</li><li>(Optional) Decorate the whoopie pie with cute sprinkles.</li></ol>

<h2 class="wp-block-heading" id="do-whoopie-pies-need-to-be-refrigerated"><strong>Do whoopie pies need to be refrigerated?</strong></h2>



<p>Yes. To avoid the filling melting and keep the whoopie pies fresh, they should be refrigerated in an airtight container. If properly refrigerated, whoopie pies last up to 7 days. If you choose to freeze them in an airtight container, They will last for up to two months.</p>

<p>Fall is finally approaching! The terrible Texas heat has calmed down a bit, and I started to see more fall themed food in store.</p>



<p>When I went grocery shopping this week, I found a small box of pumpkin spice madeleines. Madeleines are one of my favorite food, so I couldn’t resist getting them&#8230; I had different baking plans for this week, but instead of baking something else from scratch, I decided to decorate these madeleines as <a href="https://www.studioghibli.com.au/myneighbortotoro/" target="_blank" rel="noreferrer noopener">Totoro</a>! (Don’t you think Totoro and madeleines have similar shapes?)&nbsp;</p>



<p>With some almond slices, white chocolate, and dark chocolate, I transformed the ordinary looking madeleines into kawaii sweets! Here is how I did it:</p>



<h2 class="wp-block-heading">Decorating Madeleines</h2>



<h4 class="wp-block-heading"><strong>Ingredients (makes 5 Totoro themed madeleines)</strong></h4>



<ul class="wp-block-list"><li>5 <strong>madeleines</strong></li><li>1 cup <strong>White Chocolate Chips</strong></li><li>A few pieces of <strong>dark chocolate squares</strong> &#8211; enough to draw Totoro’s facial features and markings on his chest</li><li><strong>Black food coloring</strong></li><li><strong>Mint leaves</strong> (Optional)</li></ul>



<h4 class="wp-block-heading"><strong>Instructions</strong></h4>



<ol class="wp-block-list"><li>Attach almond slices on the madeleines by stabbing them into the cakes.</li></ol>

<p>2. Put ½ cup of white chocolate chips in a small bowl and cover it with saran wrap. Microwave them about 30 seconds or until the chocolate chips are melted.</p>



<p>3. Add a drop of black food coloring to the melted white chocolate. Mix until the color turns light gray. (Add more food coloring if needed.)</p>



<p>4. Dip madeleines with almond slices into the melted chocolate. Cover the entire top of the madeleines and let them dry on a drying rack.</p>



<p>5. Once the gray chocolate coatings are dry, melt the rest of the white chocolate in the microwave.</p>



<p>6. Dip the madeleines into the melted white chocolate. Cover only the bottom half of the madeleines. Dry them on the drying rack.</p>



<p>7. Transfer any leftover white chocolate into a piping bag. Draw the white part of Totoro’s eyes on the madeleines.</p>



<p>8. Once the white chocolate coatings are dry, melt the few pieces of dark chocolate squares in the microwave. Transfer the melted dark chocolate into a piping bag.</p>



<p>9. Draw markings on Totoro’s chests, eyes and nose with the melted dark chocolate. Let them dry on the drying rack.</p>



<p>10. <em>(Optional)</em> Place mint leaves in between Totoro’s ears.</p>



<p>*To add more to the Totoro theme, I also made some acorn almonds. All I did was dip some almonds into white chocolate that is dyed in light brown, then dried them on parchment paper.</p>



<h2 class="wp-block-heading">Summary</h2>



<p>I’m pretty happy how the ordinary looking madeleines now turned into Totoro themed food! I hope you try this little project and leave me a comment if you do! Happy decorating!</p>
