Baked Mochi Donuts – Rilakkuma & Hello Kitty

Do you want to make your own mochi donuts? Try these baked mochi donuts! These chewy donuts are so simple to make and you can glaze them with white chocolate and turn them into cute characters 🙂

What are mochi donuts?

Mochi donuts are a hybrid between cake donuts and chewy mochi [1], Japanese rice cakes made from cooked mochigome, a glutinous variety of short-grain rice. Mochi donuts can be made from tapioca flour or glutinous rice flour also known as Mochiko.

Where can I find Mochiko?

Mochiko is available at most Asian grocery stores or you can also find them online like Amazon.

Ingredients (Makes 12 mini baked mochi donuts)

For the mochi donut

  • 1 cup mochiko flour, 160g
  • 1/2 cup sugar, 100g
  • 1/4 teaspoon salt, 1.5g
  • 2 eggs, large
  • 2 tablespoons melted coconut oil, 30ml
  • 1/2 teaspoon baking soda, 2g
  • 1/3 cup milk, 80ml
  • 1 teaspoon apple cider vinegar, 5ml
  • 1 teaspoon vanilla extract, 5ml

For the white chocolate glaze

  • 1 heaping cup white chocolate chips, 180g
  • 2 teaspoons coconut oil, 9g

For the colorful icing

  • 3/4 tablespoon meringue powder, 7g
  • 1 1/2 tablespoon warm water (NOT hot), 22ml
  • 1/4 tablespoon light corn syrup, 5g
  • 1 cup powdered sugar, 125g
  • 1/2 teaspoon vanilla extract, 5ml
  • Pink gel food coloring
  • Golden yellow gel food coloring

For the black icing

  • 1 1/2 tablespoons unsweetened black cocoa powder, 11g
  • 1/2 heaping cup powdered sugar, 135g
  • 1 – 1 1/2 tablespoons hot water, 15ml – 22ml
  • 1/2 teaspoon vanilla extract, 2.5ml

Instructions

For the mochi donut

  1. Preheated oven to 350°F (175°C)
  2. Mix all ingredients together with a whisk.

3. Spoon or pour the batter into mini silicone donut pans.

4. Bake in the oven for about 18-20 minutes until donuts turns golden brown.

5. Take them out of the oven and let them cool in the silicone donut pans.

6. Once cooled, remove the donuts from the silicone donut pans and set them aside. Wash and dry the silicone donut pans for the next step

For the white chocolate glaze

  1. Put the white chocolate chips and the coconut oil in a microwave-safe bowl. Put plastic wrap over the bowl.
  2. Microwave the mixture in 30 second increments until all the chocolate is melted and smooth (about 1 – 2 minutes in total).
  3. Pour the melted white chocolate into the silicone donut pans (fill to ½ full)
  4. Drop in the baked mochi donut into the silicone donut pans with melted white chocolate

5. Chill the donuts in the refrigerator until the white chocolate is hardened (at least 30 min)

6. Carefully remove the chilled donuts from the silicone donut pans and set them aside.

For the colorful icing

  1. In a deep bowl, add meringue powder and warm water.
  2. Beat this for about 1 minute until you have a white and frothy mixture.

3. Add powdered sugar, corn syrup, and vanilla extract and start mixing at medium to medium-high speed.

4. Continue mixing until your icing becomes thick and peaks start forming.

5. Add â…› teaspoon of water at a time to get to the consistency you need. My icing was between medium consistency and flood consistency. More detailed explanations of icing consistency can be found here.

6. Divide the white icing into three separate portions. Add a dash of pink food coloring to one of the portions and mix well. Next, add a dash of golden yellow food coloring to another portion. Leave the rest of the portion as is.

7. Put the pink, the yellow and the white icing into separate piping bags, then set them aside until needed.

For black icing

  1. Whisk the black cocoa powder, powdered sugar, hot water, and vanilla.
  2. If needed, add â…› teaspoon of water at a time to get to the consistency you want. (I recommend medium consistency)
  3. Put the black icing into a piping bag.

For the assembly

  1. Snip off a tiny amount (about â…›-inch) at the corner of the piping bags with different icing.

2. For the Rilakkuma face, start by piping the nose area with white icing first. Working from the area makes it easier to balance overall facial features. Next, draw eyes with black icing, draw ears with yellow icing and draw cheeks with pink icing. Once the white icing is dried, draw nose and mouth with black icing.

3. For the Hello Kitty face, draw her nose with yellow icing first. Working from its nose makes it easier to balance overall facial features. Next, draw eyes and whiskers with black icing and draw bows with pink icing.

4. Feel free to add any other decorations to the donuts and enjoy!
